Vietnamese soup. It's base is this beef broth that's been cooked for hours and hours and infused with spices and it's possibly one of the most heavenly thing in the world. It's poured over rice noodles and usually some sort of meat and some onions in a massive bowl. They serve the fresh herbs and chili and hoisin sauces separately, so you can add what you want to it (so those with cilantro or chile issues don't really have to worry), and the aroma alone makes me feel good. It's obscenely healthy too. Houston has a massive Vietnamese community, and you can get a bowl of pho for three or four bucks at one of the noodle shops down in Little Vietnam. I'm sort of on a quest to find the perfect pho, and currently Miss Saigon is winning (and they only serve it on Thursdays and Fridays), though Mo Mong is closer to my house and I go there a lot. Van Loc is gaining on everyone though.
