Tilapia is a rapidly mutating fish, and can be bred to have all kinds of interesting characteristics. So the tilapia of today tastes better than the St. Peter's fish of yesterday.

Plus, it's like Tofu, it's how you cook it and what you smother it in that really creates the flavor. Stop by sometime and I'll cook you up a mean Tilapia, perhaps with a nice Thai chili sauce or a hollandaise and pepper sauce combination.
