For the roast beef one gets from the butcher and cooks in the oven, I would use a fairly strong mustard and/or a relatively mild horseradish. OTOH, if it's a beefy cheddar sandwich from Arby's, I like the Arby's sauce.
I can't bring myself to say what I'm thinking about my own personal rare roast beef.
ETA damn you, now I really really really want to go to Arby's for dinner. And I was going to try out the Trader Joe's masala sauce. As a public service, iykwim, aityd.
