And, wow, thanks to everyone for the input. If I do this, I'm planning to take at least one, and maybe 2, vacation days (for a total of 3-4 days), but not more than that because I'm a hoarder.

There are frequent periodic pull-off points, generally at particularly scenic outlooks. While I haven't driven the whole distance and it may vary in some places, for much of the road pulling over at random is not really an option.
