I don't get if it means that the sauce served on the goose would also be good on a gander or if there is some weird historical thing about geese enjoying sauce. If so, we sure turned that joy around on them, what with the cooking them and eating them in sauce.
"We" means humans generally in this context, as I don't think I've ever eated goose. Or gander.
