"We" means humans generally in this context, as I don't think I've ever eated goose. Or gander.

I have had goose for the last several Christmas dinners, thanks to sibling's in-laws. It is Not Bad. Possibly it's just that it comes with stuffing and gravy, and I love stuffing and gravy so much that I would probably eat cardboard with them.
