It may be a case of just going to the grocery store and deciding which vegetables look good at the last minute. I know that one member of our party has a thing for brussels sprouts (I'm on record as not being a fan), so I might haul out my mother's pancetta and brussels sprout recipe. I'm also thinking of maybe green beans and cherry tomatoes tossed with toasted almonds (and maybe sesame oil). Or a squash tomato onion concoction.
Oh, and macaroni and cheese, because I know that there are members of our party that are HUGE fans of macaroni and cheese. (My fondue suggestion was shot down by higher powers, though I still think they would LOVE fondue.)

Do fondue in addition for people to snack on? Convert them. Don't forget the kirsch.
I had fondue two thanksgivings ago. *sigh* I miss those people.
