Why do guitarists have several guitars on stage with them (at least sometimes)? It's not like hockey sticks, where one breaks and you get another one.

Poor guitarist I, but yes, it would allow for different strings, pickups and most importantly,
tunings, but I think you reach a critical mass at about two or
maybe three. I can't see anybody playing that fourth guitar if it isn't showboating.
See above -- mostly tunings or a different "sound" wanted for a different song (humbuckers v. single-coil or twelve string v. six, for example.)
(And sometimes it's
exactly like hockey sticks. How many rock shows have you attended?)
