It is called celiac disease, or celiac sprue. It is not really an allergy, it is an autoimmune disease caused by reaction to gluten proteins (wheat and barley, mainly). The proteins are not completely chewed up by gut proteases, and in susceptible individuals are targets for an immune response. It is more than bloating in many cases - there is considerable damage to the cells of the intestines.

Simply cutting out bread and beer is unlikely to be sufficient, though, because so many processed foods contain gluten proteins.

Luckily I don't suffer from the disease, but have worked on it in a professional capacity.
