The flowers get taken home because they get thrown out otherwise. I don't know that people go to weddings thinking "and I get to nab the flowers afterwards", or buy a more expensive wedding gift in expectation of having some weeds to bring home.
If you think people will enjoy it less because they don't get to have old flowers rotting on their kitchen table afterwards, do what my trailer-trash relatives did to celebrate the final knotting of their delinquent - have plastic champagne glasses engraved with you and your beloved's initials and the date of the wedding, and let everyone bring them home as a keepsake!
There's nothing like engraved plastic champagne glasses to say, Good Times!
