 I also don't understand what tracking everything with a kitchen scale does for you.  There is no need to be meticulous.  If you eat fruits and veggies primarily, with small amounts of healthy proteins and carbs, you will most assuredly be at a caloric intake level that works.  If you do a real 30-60 minute work out every day, combined with that diet, you will lose weight.  If you want to keep it off, eat a very healthy breakfast and lunch every day and have a sensible dinner.  If you do that, you can have those days once a week or twice a month when you eat whatever the hell you want (within reason, of course).
