Cracked Wheat Salad with Green Olives and Golden Raisins
Ingredients:
1/2 cup wheat berries
salt
1.5 cups bulgur
Finely grated zest of 4 lemons (they must have in mind small ones as I used three)
Grated zest of 2 oranges
1/4 cup extra virgin olive oil
1 tbs kosher salt
1/2 teaspoon crusted red pepper (they say optional, I say don't leave it out)
Juice of 2 lemons (consider 1 medium-large)
Juice of 2 oranges, about 2/3 cup (consider 1)
3 tbs chopped fresh parsley
2 tbs chopped fresh mint
2 tbs chopped cilantro (I went without and still delicious)
1/2 cup green olives, pitted and roughly chopped
1/2 cup golden raisin, plumped and roughly chopped
3/4 cup thinly slices celery hearts (I used stalks as the suggested substitute)
Cover the wheat berries with about two inches of water in a 2 quart sauce pan and season with a sprinkle of salt. Bring to a boil, reduce heat and simmer until tender but not mushy, about 45 minutes. Drain and set aside.
Meanwhile, place the bulgur in a large bowl and cover with 1.5 cupts of steaming hot water. Let sit about 15 minutes, stirring occassionally , until the water is absorved and the bulgur is soft. Add the cooked wheat berries.
Whisk together zests, juices, olive oil, kosher salt and red pepper. Add dressing to grains and toss well. Add the parsly, mint, cilantro, olives, raisins and celery to the grains and combine enough to moisten all ingredients.
The recipe says 4 to 6 servings, but I would say at least 6 as a tasty side dish.
This sounds like a nice, very minor, variation on tabouleh.
