Begin with Alice, both in Wonderland and beyond the Looking Glass, of course. Chronicles of Narnia do retain their magic for me.
Misty of Chincoteague was and remains a favorite; it's a horse thing. And The Red Balloon is one of those simple but multi-dimensional books.
There are a bunch of new favorites that I don't remember from when I was a kid: Jamberry is one of the best of them, as well as Chicka Chicka Boom Boom. Also, the series of Diaries of Historical Women has some great ones that bridge the kid/adult divide.
