I've done 16 (17 if my pathetic-ass stint in a saddle on a ranch counts as "cowboying," but I vote no).

rocky mountaineer (not nearly as cool as Flam railway in Norway - THAT is the scenic train that is a must-do)

What would I add if I could only add 5?
Orient express - but the trans siberian trek would be a really tempting replacement
space
pyramids
either gorillas or tigers - probably tigers, hit a new continent
Borneo to see the orangutans (tho I'd have to take my mother in law, she adores orangutans)

I note for the record: you needn't get to arctic to see polar bears in the wild. But I do not think you want to see polar bears in the wild, because it seems that usually either (i) you are lunch or (ii) they are otherwise getting lunch by going through your garbage and acting like the biggest racoons in the universe. (I admit the ones in the Central Park Zoo are unsatisfactory and look really unhappy in the summers.)

I'd add to their must-do list:

walk between big windows at Grand Central Station (they may have locked these passages, but it was really cool, and then you get chased by the cops).
Track a male lion marking his territory - this is cool, but scary as shit.
get charged by one of those elephants - also cool, rather more scary than the lion, actually.
Fuck the Harbor Bridge, when you go to Sydney do Carnivale and party in the Rocks with the transvestites. Now THAT is a good time. (The gay scene may have moved since I was there, admittedly.)
