My brother lived there a few summers ago. I'll ask him for suggestions. He did take excursions to places like the Tabasco plant and various small towns around Louisiana to sample varieties of gumbo and boudain. I'm a big fan of Lafayette, but I have the benefit of a couple of crazy burner friends who showed me around.

I love driving over the Atchafalaya Basin Bridge when I go to NOLA from Houston, especially at night, but I'm not clear on how far it is from NOLA (six hours, more or less for us to get there, and the bridge seems closer to NOLA than Houston, but that's probably relative).

February is either right before or during Mardi Gras, which I've tended to avoid, but I've heard that the smaller parades outside of the Quarter are really awesome.
