BTW, just to make it clear, you definitely
don't want to use your home's HVAC for climate control of the wine cellar. You would never want the heat on, and the A/C might be too much. The goal is to isolate the cellar from the rest of the house as much as possible.
there's a book called How and Why to Build a Wine Cellar by Richard Gold. I think it's on Amazon, but it's also available from the wine catalogs (like IWA). It's very scientific in its approach (talking about humidity gradients and what not). You don't need all the info, but if you read it you'll get a pretty good idea of what you're trying to do. (His number 1 recommendation of excavating a cave under your house really isn't practical, but he does give an idea of how to operate on the second best).
