(But, I agree - wine is such a deviant factor in an otherwise percentage-ruled world that it cannot be handled in a tip without some thought. If the Somali-guy does his little theatrics and entertains, as well as brings a good wine and/or makes good counter-suggestions to our choices ("seriously! You want a red with THIS meal? Are you Stoopid?" doesn't count), he gets paid for it. Otherwise, when we name a wine ("number 42, please"), and our server brings it, he's NOT getting 20% of the price of that wine. )
