If you're not going to bring a pet, do the Grand Canyon rafting/hiking/camping trip. You raft down the Colorado, through the Grand Canyon (which has some pretty decent rapids). At night, you camp on the banks of the Colorado. And throughout the day, you stop and hike to some pretty unbelievable places. I think the whole trip is pretty long, but you can cut it short and helicopter out, which is also a great experience.
