Canned tomatoes are perfectly fine for cooking. Fresh tomatoes are generally only any good in July and August, and they are too valuable to be cooked. I eat them sliced with just some salt and pepper and maybe a splash of vinegar of lemon juice.
The flavor of a fresh tomato would get buried under a curry.

We had consistently spectacular tomotoes in Greece in May. So much so that you wanted a "traditional" Greek salad every day. The tomatoes were that good. On each island and the mainland.
So I ask, why can't we do that here? Dammit.

Actually, in Italy, most people cook with canned tomatoes. That's where I got the habit. The Italians tend to can most of their tomatoes for the greater part of they year when they aren't fresh and only eat uncanned tomatoes in season.

Do you have a yard or a balcony? Growing tomatoes isn't that difficult.

(1) we can in July and August (at least in NE)
(2) those round red things you get in most markets aren't tomatoes. They've been bred with thick skins for transport, at the cost of taste and juciness
(3) you have to get them really fresh - like with corn, the sugars start starching as soon as they're picked. A day later, they're not as sweet
(4) truly fresh canned, when they're still sweet, can be a lot better than fresh-from-Latin America

Find your local farmers market. Buy them in season and eat them right away.
This reminds me to visit the farm stand on the way home and see if they have local corn yet.

Cook's Illustrated has also endorsed the use of canned tomatoes. Those and frozen petite peas, which are way better than you could ever get other than from your own garden.
My problem with almost all canned tomatoes these days is that they have calcium carbonate added to help the tomatoes or tomato pieces keep their shape. That's great if you're making something where you want the tomatoes to keep their shape, but if you want the tomatoes to break down like they ought, it sucks. I've promised myself that this year I'm getting a box from a farm (the unpretty ones they don't sell at the farmers' market) and canning them myself. That's what my mom has always done.

I get around that by buying puree when I want them broken down and buying diced or whole if I want them to retain more texture.
If you can find San Marzano, they don't have calcium carbonate. They cost more, but they're worth it.

was? 2011 sucked. that was when RT figured out lots of amazon fees were being diverted, and I took a plea. I was banned for 5 years, until she left to head HHS in the first Jenna bush administration.

I'm beginning to suspect that this is not actually Ty at fifty.

Did I say Jenna Bush? I meant Liz Cheney. Oops -- wrong sock!!! Nothing to see here -- move along.

I keep forgetting that i didn't take Dale Carnegie until 2012. And to my past self I can only say, will you take me at my word and stop?
in 2011 Obama's birth certificate becomes public. turns out he was born in another country. The obama packed Supreme court rules 6-3 that the constitutional restrictions on who can be President "don't matter any more, because the vote is sacred."
This opened the door for Jenna even though she was only 34 on election day 2016.
