Oakwood Game Farm is outside my home town. They sell fresh and smoked pheasant and appear to be cheaper than your site.
More importantly, they have some recipes on the site.
ETA:
This place has even more recipes.
My dad used to hunt pheasant around the farm. Mom always made it just like chicken so I've never had it fixed gourmet.
