 I made boneless shortribs this weekend.  30 hours in the tub, a quick sear.  And holy crap they were good.  Meltingly good.  I know wonk hates techno-cooking but this was amazing.
 |  It's not so much that I hate techno-cooking as that I don't think it turns out a superior product. I can do short ribs in a dutch oven as well as a sous-vide and I can start them and eat them on the same day.
