I've seen the pre-cooked bacon before but always in the refrigerated section. Bacon on the shelf seems a little odd, but when you consider all the preservatives, maybe it's not so weird.
On the plus side, someone (hey Fringey!) could keep it in a desk drawer for emergency snacking.

It's shelf-stable until opened. After that it needs to be refrigerated.
