 Four large diver scallopsolive oil
 tbsp butter
 zest of one lime
 juice of one lime
 sea salt
 black pepper
 
 saute the scallops in the olive oil and butter.  When they are golden brown, but still not quite cooked,add lime zest and lime juice.  Cook until done, reduce pan juices to a scant tbsp.
 
 dress scallops with sea salt and pepper, drizzle pan sauce over all.

				Morels
			 
 Morels appeared at the Farmers Market today. $35/lb for the biggest ones I've seen.  I prefer the smaller ones but these were big enough to put on the grill.
 At that price I need to figure out a way to spread some morel spores over the woodsy part of the Fugee Family Farm and start growing those babies.
