Essentially the bagel is boiled in honey-sweetened water before being baked in a wood-fired oven (must be a wood-fired oven). The taste is exceptional and the crust is delicious. Montreal is known for its smoked meat, and Montreal bagels go well with smoked meat (and on their own, and with cheese and a whole bunch of other stuff). God, now I really want one.
